WINEMAKER'S NOTES

In October 2006, the rare and coveted combination of wet followed by dry weather promoted botrytis, the "noble rot," to form on our mature Semillon clusters. This wine has intensely honeyed aromas and flavors that are of the divine- ripe pear, apricot and mango, creme caramel, vanilla bean and toasted almond.

SUGGESTED PAIRINGS

Pairs wonderfully with dessert dishes including Chocolate Mille Feuille with earl grey sauce and ice cream with berries and crushed vanilla cookies. This wine is decadent served alongside cheeses such as blue cheese with dried fruit and a drizzling of honey, hard cheeses including dry jack or aged goudas, brie or roquefort cheese and fresh goat cheese with almond or dried apricot. It is also delicious alongside Pan Seared Foie Gras with fruit chutney, fresh oysters, salty cured ham with pineapple or apricot glaze and as a reduction drizzled over sauteed chicken.
