Two Alsatian Pinot Gris clones, Colmar 152 and 146, grow in our north-facing vineyard, ideally suited to the variety. Whole clusters were gently pressed, and the juice racked to neutral oak for fermentation with only natural yeasts where it underwent partial malolactic fermentation. The wine then aged in traditional tanks, as in Alsace, with a biweekly stirring of the lees for enhanced richness and complexity.
